THIS delicious cake is a different variation of the tiramisu altogether. The light finger-sized sponge cakes or biscuits that surround the cake are replaced with chocolate shavings.
The layers of bitter cocoa powder, sweet mascarpone cheese and moist chocolate cake are simply addictive. The raspberry coulis, drizzled on the sides, adds a tangy finish to this luscious cake.
Ingredients
For chocolate sponge cake, you will need:
100g egg white
100g sugar
20g plain flour
10g cocoa powder
1tsp soda bicarbonate
1tsp baking powder
15g melted butter
For topping cream, you will need:
250g mascarpone cheese
90g icing sugar
2 egg yolks
250ml single cream
6g melted gelatine

Method
For sponge cake:
Whip egg white and sugar to reach meringue-like consistency. Add flour, cocoa powder, soda bicarbonate and baking powder. Add melted butter and bake at 180°C for 12 minutes.
For topping cream:
Whip mascarpone cheese with icing sugar and egg yolks together until they form soft peaks. Add single cream and melted gelatin. Just like a sandwich cake, layer one slice of cake and top it off with topping cream until you reach about five layers. Sieve cocoa powder over the top layer (cream). Refrigerate and serve with chocolate syrup on the sides or enjoy it on its own. Ideal for seven.
