GRAINS are not only a good source of fibre and nutrients, but also can be easily incorporated into many styles of cooking, writes SUZANNA PILLAY.
Ingredients
1 cup organic red quinoa
1 cup water
1 cup chopped organic green apple
1/4 cup organic mulberry
1/4 cup chopped organic hazelnut
1 stalk vanilla
11/2 tbsp organic cane sugar
10g seabird nest seaweed (washed and soaked in water for five hours to remove fishy smell)
Dash of cinnamon
Juice of 1/2 organic lemon
Lemon zest from 1/2 lemon

Method
1. Cook quinoa in water for 12-15 minutes until almost soft. Set aside to cool.
2. Bring water with seabird nest seaweed to a boil and let it dissolve with slow heat. Add the rest of the ingredients (and quinoa), with lemon juice at the end.
3. Fill into dessert glasses and let it chill for three hours in the fridge before serving.
