Sauteed Prawns With Homemade Hot & Spicy Sauce

From the menu of Zhen Shan Mei, a fine-dining Taiwanese restaurant at Solaris Mont Kiara.

 

INGREDIENTS

  • 200g prawns
  • 30g flour
  • 40g egg (beaten)
  • 40g bread crumbs
  • 10g onion
  • 20g ginger
  • 30g rice wine

[Measurement Equivalents]
 

METHOD

1. Clean and peel prawns thoroughly.

2. Remove head. Marinate the prawns with ginger and rice wine for an hour or so.

3. Then, pat prawns dry with a kitchen towel.

4. Dip prawns in flour (make sure prawns are thoroughly coated with flour), then dip in beaten egg and lastly, coat with breadcrumbs.

5. Heat oil and fry until golden brown.

 

Tip: This can be eaten as it is or sauteed with any sauce of your choice, or use a ready-made sauce: go hot and spicy or sweet and sour, even chilli sauce or mayonnaise would do.
