I ALWAYS thought there is some intricate process in preparing this fresh green dessert. Its spongy smooth but substantial texture melts in your mouth. Its undeniably sweet flavour and pandan fragrance are comfortingly familiar. But it´s the slightly crusty brown bottom and top corners that I like the most The sesame seeds gives it a crunch too.

This recipe comes from Impiana KLCC Hotel.

Ingredients

  • 1 cup sugar
  • 1 cup pandan juice
  • 2 cups flour
  • 450ml coconut milk
  • 3 eggs
  • a pinch of salt
  • green food colouring (alas, this one´s a must to achieve the trademark green colour!)
  • a handful of sesame seeds, lightly roasted

Method

1. Pre-heat your oven at 180C.

2. Next, mix all the ingredients together until they are well combined.

3. Then pour the mixture into a baking tin.

4. Fill it half a centimetre from the top.

5. Bake for 40 to 50 minutes at 180C.

6. Once the kuih is baked, sprinkle sesame seeds on it and cut into thick slices.

A Fun Tip:
To make it more interesting, a friend has tried it in different shaped baking tins. She has even baked it in small, animal shaped baking tins for her children.
