Malay Cuisine

This is a famous dish in Negeri Sembilan. Made with prawns and a variety of spices, it is sourish and spicy.

From Nikko Hotel, Kuala Lumpur.


First you blend:

  • 80g red chillies
  • 60g onions
  • 40g garlic
  • 20g belacan
  • 30g lemongrass
  • 5g turmeric

Then gather:
  • 800g tiger prawns
  • 50g chilli paste
  • handful of turmeric leaves
  • 500ml tamarind juice
  • 100g each chilli & tomato sauce
  • 1 litre oil
  • salt

[Measurement Equivalents]


1. First, heat oil and saute all the blended items until fragrant.

2. Add chilli paste and turmeric leaves.

3. Then pour in the tamarind juice.

4. After which, add in chillies and tomato sauce.

5. Lastly, add prawns, mix well and simmer until the prawns are well-cooked.

You can substitute the prawns with squid, chicken or beef.
