Bread pudding is a great tea-time dessert.

Relatively easy to make, it´s good for pot-luck when friends and families gather.

Cherries or orange peels can be used to add colour and flavour.

In conjunction with its 10th anniversary, Kuala Lumpur´s Ancasa Hotel and Spa has included the dessert in its buffet and high-tea menu (offered at a discount) at Saffron Brasserie.

Ingredients

Bread pudding:

  • white bread (two loaves)
  • half a dozen eggs
  • 200g sugar
  • 50g raisins
  • 50g almond flakes
  • 20g butter
  • 30g brown sugar
  • 1 litre fresh milk
  • 1 litre whipped cream
  • 5ml vanilla essence

Vanilla sauce:
  • half a dozen egg yolks
  • 100g sugar
  • 1 litre fresh milk
  • 5ml vanilla essence

Method

To make the bread pudding:
1. Mix the eggs and sugar in a bowl and whisk until fluffy.

2. Add in the milk and whipped cream and beat well.

3. Next, add the vanilla essence and give the mixture a good stir.

4. Cut the bread slices into two and remove crust. Arrange the slices in a serving dish, sprinkling the brown sugar, almond flakes and golden raisins over it.

5. Then pour in the mixture into the dish, adding melted butter. Store in the chiller for a day.

6. Two hours before serving, fill a tray with water. Place the serving dish in the tray and bake the mixture in the oven for 90 minutes at 180 degrees C.

7. When it´s done, insert a toothpick (it should come out clean) to ensure the centre of the pudding is well cooked.

8. Let it cool slightly. Then brush apricot glaze or a thin layer of jam over it to sweeten it further.

To make the sauce:
1. Heat up the milk in a saucepan, add in the sugar and stir for one minute.

2. Then add the vanilla essence and egg yolks. Stir until sauce is thick.

3. Serve it with the bread pudding while still warm.

Tip: It is advisable to use leftover bread to better absorb the milk.
