This month, Tobiou (flying fish) takes center stage at Midori.
Popular in Japanese cuisine, its flesh is light and tasty and its egg roe known
as ´tobiko´ is often used when making sushi.
Specialties will be served raw, grilled, deepfried or
braised. Any which way, you´ll just
enjoy the succulent servings presented at Midori.
And if you are still hungry for more, have some sushi on the
side topped with tobiko fish roe.
